Gingersnap Ice Cream Sandwiches

  I’m Back!

Ok, not everybody at once!

Well, in case you haven’t noticed, I have been a little M.I.A.

This can be due to a combination of things.  For one, I got sick… Boo!

Wait a minute, I already used that excuse.  Ok, hold on… let me think.

Ok, I got it!  I also lost my BLOGGING MOJO!

Not to worry!  I found it again.  It was hiding under a pile of dirty clothes in the corner of my closet.

SO!  Without further adieu,

Who wants to take a look at a Yummy dessert?

That’s right y’all!  Say it with me!

ICE.CREAM.SANDWICHES.  !!!

I basically combined two of my most favorite things in the world.

Gingersnaps AND Ice Cream!

I used this brand of Gingersnaps because they seem to have a slight softness to them that most Gingersnaps don’t have.

This way, there is no Teeth Chipping and Dental bills being sent to me.

Also, make sure to let your Ice Cream sit out about 10 minutes to soften up before topping cookies.

Just lay them bottom side up.

Take a metal scoop (if I had to guess, I would say mine measures out around a teaspoon or so) and top one side with a scoop of the Ice Cream.

(You didn’t think I was going to stop there, did you?)

Now top the other cookies with the same thing! 🙂

Awe!  Aren’t they so cute?

Carefully take one side and top it with another.  Then carefully press together.

(The ice cream will be soft, so you should have no problem doing this)

Perfect little dessert…..

Or is it?

AGAIN…You didn’t honestly think I was going to stop there either, did you?

Grab some pretty sprinkles….

Let your sandwich go for a roll.

And Voila!

Make sure you put in the freezer for just a little bit to set up.  You can tell some of them started to melt a little, but that will be ok after they hang out in the freezer.

In about 20 to 30 minutes, you will have happy tummies !!!

The combinations for this are endless!  If you aren’t the biggest fan of Gingersnaps and if Vanilla is too boring for you,

try your favorite flat cookie paired with your favorite ice cream flavor.

GO CRAZY!

I’m sick! POO!

You know, it’s funny getting sick.

Being a mom and getting sick.

More specifically, being a mom and getting the FLU.

Not fun, but funny.

You think to yourself, “Well, it’s ok.  Just a little cold.  I can get over this pretty quick.  Just take some cold medicine and I’ll be right as rain!”

Right?

WRONG!

I haven’t blogged for a few days because, WELL!

I got’s the VIRUS! (*This is what my husband and I call it when we get sick, grammar and all)

Though my husband would argue with you that he only gets sick for 5 minutes.  (Literally!  He thinks this!  We’ll talk more about his delusions later) : D

This is what I have consumed for the past few days.  Needless to say, I’m REALLY ready for some real food.

But for now,

I’m on the mend.

I got some Tamiflu in me in the right amount of time.  GO ME!

And I must take a few minutes to profess my love for this drug.

Tamiflu, if it weren’t for you, I wouldn’t be typing this post right now.

I love you, Tamiflu.

Ok, enough.

I must say, I have some pretty inventive kids.

This all hit me right when school got out for the Holiday.

I didn’t know what the heck I was going to do being sick and having to keep them entertained.

Apparently, pizza boxes make great televisions.  They decided to host their own talk show.

When that got old, they decided to open a book fair.

They wanted me to see it so bad.

When I saw it from the corner, I thought it was sweet.

This cute little book fair.

Until……

I looked up….

and saw….

This!

A MEGA BOOK FAIR!

I guess they have learned from their parents to just go for it!

(I wonder who is going to clean this up?)

Now I have to give some props to the hubster.

He has been trying very hard to clean and keep the house from getting to be a total wreck.

(He may or may not have paid me for this Advertisement)

I wonder if he realizes he missed these?

Oh well.

Christmas: Chalkboard Decorating

I love my little Chalkboard that I bought from Etsy last year.

Come to think of it, I just love Chalkboards in general.

They are so much fun to play with and they work for any season.

Whether you just want to write down a shopping list, or if you want to give your kids a cool spot to draw!

 

Since our “Theme” for Christmas is the Grinch who Stole Christmas, I figured I would quote him.

Now, I did my best attempt at fitting the whole quote on the board.

I started out larger than I should have and realized that as I started to get towards the bottom.

By the end, I was itty bitty, but I didn’t erase and start over because, umm… well….

“That was the look I was going for?”

Yup!  That’s it!

Have fun with it!

 

Add an ornament here or there.

Use different sayings.  Famous quotes from Christmas movies past are the best!

I think I am even going to use this quote on the Teacher Christmas Presents my little ones do.

(Other than the fact that I just realized I misspelled Virginia,)

This one reminds me of a time when I was little when I wrote Santa a letter and asked him if he was real.

I think we all have that moment at some point.

I remember getting a rolled up typed letter that was secured by a single red ribbon.

It was addressed:  Dear Esther,

It went on to talk about how he was just as real as I was and how he believed in me just like I believed in him……

I found out my mother typed that letter…..

LAST YEAR!

THIS IS WHY I HAVE TRUST ISSUES, PEOPLE!

OK, Moving on!  : D

You should, however, be warned.

If you leave your Chalkboard left alone for any length of time, it could end up like this….

Pretty sure she is the culprit….

Come to think of it, it’s not so bad.

Think I’ll keep it.  : )
